Coconut Ube Popcorn
Sweet, earthy and with a hint of vanilla, ube extract adds an exotic flavor and brilliant color to this tasty popcorn that’s accented with coconut and white chocolate.

Ingredients
- 2 tbsp coconut oil
- 3 tbsp granulated sugar
- 1 tsp ube extract, divided
- 1/2 cup popcorn kernels
- 2/3 cup white chocolate chips
- 1 tbsp coconut milk
- 1/3 cup coconut flakes
Directions
- Line large baking sheet with parchment paper.
- In large saucepan set over medium heat, stir together coconut oil, sugar and 3/4 tsp ube extract. Add popcorn kernels and cook, stirring occasionally, for 5 to 6 minutes or until kernels start to pop.
- Cover with the lid slightly ajar and shake vigorously until popping slows down to a few pops after several seconds. Remove from heat.
- Transfer popcorn to prepared baking sheet and spread to even layer.
- In medium microwave-safe bowl, stir together white chocolate chips, coconut milk and remaining ¼ tsp ube extract. Microwave on HIGH, stirring every 15 seconds, for 30 seconds to 1 minute or until smooth.
- Drizzle melted chocolate mixture over popcorn. Sprinkle with coconut chips. Let stand until firm and cooled completely. Break into clusters to serve.
Tips: Use toasted shaved coconut if desired.
Ube extract is made from a bright purple yam. You can find it in specialty stores and online, and at some well-stocked grocery stores.
